Three easy recipes for students
Moved out of home, but still craving some home style cooking? Here are three easy and delicious meals that anyone can whip up, regardless of their cooking skills.
Easy and tasty roast beef
One thing that can be hard to master is a roast. This recipe will ensure your roast is never dry and is always super flavoursome.
Ingredients
1kg beef rib roast
1 can condensed cream of mushroom soup
1 packet French onion soup mix
Method
Preheat oven to 180°C. Place a large sheet of foil in a frying pan/deep baking dish, enough to fully wrap the beef. In a separate bowl, mix the French onion soup mix and can of condensed cream of mushroom soup. Place the beef in the centre of the foil and bring the foil up the sides of the baking dish to make a bowl. Pour the soup mix over the beef and fold the foil to seal in the soup. Bake in the oven until tender (approximately 1 hour). Serve with the gravy from the bottom of the pan.
Serving suggestion: Serve your delicious roast beef with some creamy mashed potatoes and steamed veggies. Yum!!
Potato and leek Soup
There is nothing better on a cold day or when you are feeling a little under the weather, than a nice hearty soup. Here is one of my personal favorites, which is super easy and fairly inexpensive.
Ingredients
1 litre chicken stock
350g potatoes, diced
3 leeks, chopped
45g butter
Method
In a saucepan, melt half the butter over low heat. Add the leeks and cook, stirring occasionally, until softened (approximately 5 minutes). Add the potatoes and cook for 3 minutes. Increase the heat to medium, add the stock and bring to a boil. Reduce to a simmer and cook until the leeks and potatoes are soft (approximately 35 to 40 minutes). Remove the pan from the heat and add the remaining butter in small pieces, stirring until dissolved. Season with salt and pepper. Transfer to a blender or use a stick blender to puree then serve.
Serving suggestion: Serve your delicious soup with warm buttery toast and fresh parsley on top. Enjoy!!
Creamy Bacon & Sun-Dried Tomato Chicken
For a quick and tasty chicken meal this dish is sure to hit the spot. Plus, who doesn’t love bacon?
Ingredients
6 rashers bacon, cut into strips
4 chicken breast fillets, cut into bite size pieces
½ cup semi-dried tomatoes, halved
1 tub (250g) cream cheese for cooking
Method
In a greased or non-stick frying pan, brown the chicken (approximately 4 to 5 minutes). Add the bacon and cook until brown. Stir in the semi-dried tomatoes. Add the cream cheese and simmer until thickened (approximately 4 to 5 minutes).
Serving suggestion: Serve over rice, cous cous or mashed potatoes with a side of steamed greens and fresh basil or parsley leaves sprinkled over the top. Delicious!!
